fresh, sweet, salty and sour!
3 cups cubed seedless watermelon
3 Tbsp fresh squeezed lime juice
2 Tbsp Olive oil
1/2 Tsp. lime zest
1 jalapeño pepper, diced
small handful Fresh basil, cut into thin strips
fresh ground pepper
1. Whisk the olive oil into the lime juice and add zest. Pour dressing over watermelon cubes, cover and refrigerate until ready to serve.
2. Serve in individual bowls and garnish with basil, jalapeño and coarse salt. Add a bit of fresh ground black pepper in the center.
3. Serve immediately.
