3 little cookies

This is a recipe for vegan gluten free oatmeal cookies.  It makes 3 cookies.  It’s for girls like me who cannot say no to “just one more” cookie.

Ingredients:
6 tbsp  uncooked gluten free rolled oats
3 tbsp All-Purpose GF Flour
1/16 tsp cinnamon — that would be just a small amount. You’ll have to eye ball
1/16 tsp baking soda You’ll have to eye ball a 1/4 teaspoon only 1/4
pinch salt A very small pinch.
2 tbsp maple syrup
1 tbsp safflower, canola, or other neutral oil
1/16 tsp vanilla You’ll have to eye ball a 1/4 teaspoon only 1/4
1 Tsp ground flaxseed
About 1/5 of a medium banana
2 tbsp raisins , add chocolate chips and nuts if you like.  I added walnuts

Directions:

1. Preheat oven to 375°.

2. Mix all the ingredients together in a bowl. Spoon onto a cookie sheet in three balls. Bake for 6-7 minutes until browning on bottom. Remove from oven but allow to continue baking on cookie sheet for another 5 minutes.

3. Eat them all.  It’s only three cookies.

    I definitely cannot say no but absolutely love baking. Will make these right now and not feel bad, cause it’s only 3 cookies after all!

  2. This makes me want to reduce all my cookies recipes down to just three tiny cookies at a time! Warm cookies are the best anyway, right?
